Paczkis, pronounced "poonch-keys," are traditional yeast-based fried pastries typically filled with jams and creams. Enjoying these delicious treats before the pre-Easter fasting period is a long-standing cultural tradition that brings families together around the table. In this hands-on class, you will learn to prepare these pastries completely from scratch and develop the practical skills needed to make them at home year after year. You will prepare both jam-filled and custard-filled paczki during the session, and take home six finished pastries to share with family and friends or keep all for yourself. To help you complete the work efficiently and effectively, we will have a batch of dough prepared in advance, allowing you to focus on the techniques of cutting, shaping, and proofing. You will also make your own batch of dough during the session to take home for future use and practice. Similarly, we will prepare a custard filling in advance so that it is ready and waiting for assembling and filling the pastries.
