Wai Hon Chu

Teaches at The Institute of Culinary Education

Wai Hon Chu is the co-author of The Dumpling: A Seasonal Guide, a collection of traditional dumpling recipes from around the world. Chu completed his culinary training at The Art Institute of New York and has worked in the kitchens of March, Clementine, and The Russian Tea Room. In 1999, he launched El Eden Chocolates, which grew into a Manhattan storefront offering over 25 truffle varieties nationwide. His handmade chocolates have garnered rave reviews from The New York Times, Food & Wine, Chocolatier, Fortune Small Business, New York magazine, TimeOut New York, National Public Radio, and others. Chu was born in Hong Kong and moved to New York City’s Chinatown where his father worked as a butcher and a restaurant chef for over 23 years. Wai currently works as a cooking instructor at the Institute of Culinary Education, the Natural Gourmet Institute, and the Bowery Culinary Center at Whole Foods Market.

    It was a lot of fun, and Chef Wai Hon Chu is a great teacher! He explains everything so well, and is so enthusiastic about food and cooking. We were all at different levels in the class (I am very beginner), but Chef never made any of us feel stupid, just kept encouraging and offering tips and explanations. I would definitely take another class.

    I could be better I the cefe had tell us where they keep the ingredients. As it’s was fiesta time over there I did have to ask for igredients all the time... otherwise was good enoghf! Thank you!

    Dim sum meatballs were not the ones you have in Chinatown. I felt awkward asking questions because staff were in such a rush to prepare the dishes. We ended up finishing 20 minutes early. So maybe more time to address questions asked in class?

    It was a fun class. I thought it would be a bit more instructional as it went along, but you independently follow the provided recipes after the initial instructions on chopping/cutting. I would take another class at ICE.
