This class was so great! Loved everything about it.

We were sitting in on this class to see if it would work for a company event. It wouldn't. The instructor was prepping in what looked like her living room, with a dog walking around (eating anything that she dropped on the floor). At one point while kneading the dough, she mentioned something about a participant of a previous class saying she was dreaming she was punching a co-worker in the face... totally inappropriate for a company event.
We were sent the wrong recipe (as were others in the class). The instructor suggested in the future that we could work directly with her at a cheaper rate, with correct instructions.
We left the class after about 25-30 minutes.

The only issue I had was that my meeting had the time starting at 6 est—I logged and waiting for about 15 minutes. I needed to check you website to see that the class was actually starting much later.

Carolyn is an absolute gem. Really a great teacher and a great personality. She knows how to explain things in a way that keeps you interested but is also fun! We had a great time. Our rennet wasn’t great so we didn’t end up with mozzarella but we feel confident we can replicate it on our own when we get better rennet!!!

The teacher was really great, but making cheese is extremely difficult. No one in the class got the results we should have- mine was essentially ricotta. I learned that I don't want to make my own cheese, but I had a lot of fun attempting it! The teacher was very funny and personable, but the ingredients provided through CourseHorse were terrible. Also they should write a better list of supplies: you need a thermometer and do not buy homogenized milk!

Instructor was great. Class was great. Most important, the cheese came out pretty good for a first-timer! It looked and tasted like mozzarella cheese, so I was very happy. There are 2 reasons that I’m only giving 4 stars and 5 stars. I want to note that neither of these issues seemed to be in the direct control of the instructor.
First issue, the pre-class email with ingredients and equipment list was not as clear as it could have been. Specifically, the equipment list did not include a thermometer, which was pretty important since there is a step where you need to keep water at a constant 175-185 degrees F. The equipment list also stated you need a colander but did not specify it can’t have big holes in it (e.g., pasta colander will not work, need something more like a fine mesh colander).
Second issue, the pre-class email encouraged participants to purchase rennet (animal or vegetable, tablet or liquid) from a specific supplier: https://cheesemaking.com/products/tablet-vegetable-rennet. All of us who did so had issues with our rennet tablets. Instructor asked how they were shipped, and it turns out the rennet tablets were not shipped properly. They need to be kept cool. Since we were all shipping in August with peak summer heat, many of us had issues. I put mine in the freezer (per instructions) upon receipt, but I still had to use more than double the amount because my bacteria was half dead. Yuck.
Again, instructor was very helpful with all of these issues and still managed to help most of us coax something like mozzarella cheese from our efforts despite these issues. She ALSO offered any participant with issues to drop in for free on any upcoming class to try again, which was an awesome way to resolve these issues. She was really, really great.

Instructor was very nice and gave good instructions but things were left out of needed items. A candy thermometer is an important tool in beginning cheese making and it was not on list of needs in email. Otherwise had fun

It was a fun class and the mozzarella was a success. Learned a lot! I would have liked the written instructions ahead of Time. the class as it was a little hard to follow as ppl kept asking questions and interrupting the demonstration.
It was noisy since ppl did not go on mute. But all in all a fun informative class.

The class was very fun and instructional! We thought that making cheese with a few tools and a gallon of milk would be impossible, but Carolyn was a helpful and charismatic teacher. She even offered to stay on 30 minutes past the course time to help us get it right. We’d love to take more of her classes!

Would have been perfect, but there were a lot of fails for some reason. Instructor was awesome and fun. I’d love to take more classes with her. I’m trying again - have found a source within 45 miles for some top notch ingredients so hope that will make a difference!

I thought the instructor was very kind, witty and expert in the making of mozzarella cheese. However, it would have been helpful to suggest having a partner to help with the various steps and materials. Doing it on my own was pretty overwhelming, even though I have made ricotta cheese from scratch.

The course instructor was fantastic, she deserved a 5+. However the recommended ingredients did not work the way they should have.

This was a very fun class with Carolyn Montgomery. She was very thorough in her demonstration and teaching of how to prepare fresh mozzarella. She was very patient and imparted a sense of calm to all who attended.
I have recommended this class to many of my friends already.

Carolyn was great, very knowledgeable and friendly. Needs improvement: list of materials needs to be more specific (non ultra pasteurized milk, thermometer)
Also the varying pace of the participants due to different heat sources etc., made it difficult at times to know what the next step was because I was behind the others. My product did not come out well (inedible).

Carolyn was very nice and helpful but I think this is a really tough class to teach remotely. I am taking the class again since my cheese was an epic fail.

Carolyn is a lovely teacher. She explained everything clearly and answered questions with patience and excitement. The camera setup/ sound was good as well. I learned a lot in the short time and am inspired to experiment more in my cocktail making.

Class was a lot of fun. Very lively and entertaining instructor. I think she would be great fun in person. It was a little fast doing it virtually because she couldn’t really interact with us and see if we were following along and doing it right or wrong but after the second drink we were feeling no pain anyway and had a great time.

It was fantastic! And for the first remote class, it was great! Carolyn not only gave us recipes, but also educated us on the liquor and liqueur and the differences. She has had great experiences and shared just enough. It was a blast. She is real, honest and clearly lives what she does. The only hiccup - just because if the scramble to present online, was the poor video quality. But the audio - which was most important- was great. And the text capability in Zoom connected and gaps. Thanks so much for a great time!!
